I really don’t understand why brisket is so much harder to come by in the supermarkets than say, topside or the steak cuts. In my opinion, cooked properly, it’s the tastiest cut of beef you can get and the texture is sublime. This 12 Hour Brisket is the perfect way to turn a tough cut of meat into something that just melts in the mouth.
